This is a typical Turkish dish generally served in large gatherings. There are at list five different types of börek in Turkish cuisine and today I will post one of the classics.
Making the dough calls for lots of care and patience. It must be rolled out very thinly, and spread with olive oil. The stuffing is placed on top, and the dough folded over in half.
The main ingredient for the filling is spinach combined with feta cheese. You may also fill the borek with any type of cheese, minced meat, potatoes etc..
Cacιk -plain yogurt with cucumber, garlic, salt and chopped mint is often served with these delicious dough pockets.
So for this recipe you need:
For the dough:
- 3 cups/350g flour;
- 100 ml milk;
- 1 egg;
- 100 ml olive oil;
- 1 tsp/5 g baking powder;
- a pinch of salt.
For the stuffing:
- 1.5 Kg fresh spinach leaf or 500 g frozen spinach leaf;
- 100 g feta cheese.
- 1 bunch of green onion;
- 1 tbsp olive oil;
- salt and pepper to taste.
For brushing:
- 2 tbsp flour;
- 50 ml olive oil;
- 125 set yogurt;
- 1 tbsp sesame seeds.
To make the dough, combine the flour, milk, egg, olive oil, baking powder and salt in a large bowl, and knead until smooth. Leave to stand for 15 minutes.
To make the stuffing cut into small pieces the spring green onion. Add 1 tbsp of olive oil into a pan, add the onion, then the spinach leafs. Set aside and add the crumbled feta cheese.
Now, sprinkle the worktop with flour. Divide the dough into evenly sized pieces and shape into balls. Roll the dough balls into very thin circles and brush with olive oil.
Place a tablespoon of filling in the middle of the dough circles and fold them in half. Squeeze the edges together with fingers and trim with a pastry wheel.
Then, brush 2 tbsp olive oil over an oven-proof dish and arrange the dough pockets in it, overlapping them slightly and covering with olive oil.
For the brushing, stir the yogurt with flour and olive oil. Brush it over the dough pockets and sprinkle over the sesame seeds. Place in a preheated oven and bake at 350°F/180°C for 30-35 minutes (depending on the type of your oven).
Arrange on a dish and serve!! Best with ayran or cacιk aside.
