This is one of my favorite recipe and it’s relatively easy to make. And because the fall is knocking already on our doors is the perfect recipe for this time of the year. I’m sure that you will find plenty of plums, just in a short trip to your local market.
This recipe is for about 10 servings and depends pretty much of the size of your plums. I had a small to medium size plums and the pictures I’ve taken are for 20 servings ( 40 dumplings).
So, for this recipe you will need: for the dough
- 1kg potatoes;
- 330 gr. regular flour;
- 1 egg;
- 3 ts of sugar powder;
- a pinch of salt;
- some vanilla extract -1ts – if you like the aroma;
- 500 gr. plums;
for rolling the dumplings:
- 6 tbs of bread crumbs;
- 50 gr.unsalted butter;
- 6tbs of brown sugar;
- 1 ts cinnamon;
First, wash well the plums and then get rid of the kernel. If you don’t care about the calories count, place a 1/4 ts of brown sugar in each plum. Put them into the refrigerator until your dough is ready.
Wash well the potatoes (do not peel them!) and put them to boil. Be sure to pick the same kind that you use for mashed potatoes.
When the potatoes are boiled, let them cool then peel the skin off and mash them.
If you put the potatoes to boil don’t stand…it’s time to prepare the bread crumbs for rolling the dumplings:
In a pan put the butter to melt slowly over a medium low heat. When it’s completely melt add the bread crumbs and stir continuously until it turns golden brown.
When the bread crumbs cools down it’s time to add the brown sugar cane and the cinnamon. This is very important, the bread crumbs has to be cool, otherwise it will melt your sugar… and you don’t want that!
Mix well and put the bread crumbs aside.
Lets get back to the dough. Add the flour to the mashed potatoes, a pinch of salt, the sugar powder, the vanilla extract and the egg beaten. Put it in a blender and mix the ingredients well until it turns into a dough. The dough will appear to you a bit sticky, don’t worry when you make the dumplings you will be using flour.
Into a pot, add about 3 liters of water and let it boil. When it reaches the boiling point get it to a low heat.
Put your hand into flour (to cover your palm) get a full tablespoon of dough, put the plum in the middle then roll the dough around into a dumpling ball shape.
When you put the dumplings to boil they will “sink” down….Don’t worry…when they surfaced ..they are ready!
Take your dumplings out with a slotted spoon, let them drain well and roll them into the bread crumbs.
It is very important to roll them immediately into the bread crumbs…if you let them cool down….the bread crumbs won’t stick to the dumplings!
